Full-Time employees are eligible for benefits, 60 days after the start date.

The Lead Steward PM ensures that all dish and glass washing machines are in operating order with the necessary chemicals, detergents and additives.  This position assigns stewards to different areas of operation and work stations when necessary.  The Lead Steward PM also ensures that all kitchens are being maintained and cleaned according to Big Canyon Country Club and Orange County Health Department standards.

Duties and Responsibilities:

  • Ensure Steward team engages in proper care, cleaning and inventory of all china, glass, silver and banquet equipment, by giving direction to the stewarding staff daily
  • Assist with preparing Banquet food service equipment (i.e., chafers, tongs, props, etc) on buffets and all other functions
  • Work with Culinary and Front of the House to complete equipment requisitions
  • Assist with rental deliveries/receiving and proper return and storage after use
  • Assist in maintaining the proper inventory of china, glass and silver and alert management when items are needed
  • Understand and consistently follow proper sanitation practices
  • Attend staff meetings and attend BEO meetings
  • Schedule periodic cleaning of the Employee Dining Room
  • Use all chemical cleaning supplies in a careful and safe manner, maintain par levels¬†and inform supervisor/manager of any items needed
  • Clean and maintain all food service equipment, storage and preparation areas
  • Complete a temperature log for all refrigeration in the kitchens
  • Assist in the execution and planning of schedules
  • Helps maintain cleanliness of Dumpster Area with Facilities
  • Ensures trash is taken out on a routine basis
  • Performs other appropriate tasks as assigned by Food and Beverage Supervisors and Management

Knowledge, skills and abilities:

Must be familiar with kitchen and food service equipment, cleaning supplies and chemicals; maintenance, cleaning and polishing of all silver/stainless steel equipment, excellent verbal communication skills are required.  Must be knowledgeable and have the ability to set banquet rooms and buffets with proper equipment, tables, chairs, linens, silver and glassware, etc.


High School Diploma

Experience, certifications, licenses, etc.:

Minimum of 1-3 years of hospitality experience preferred.

Physical/Environmental Demands:

Must be able to lift up to 50 lbs, stand for prolonged periods of time and work in high temperature kitchens.

Work Environment:

Primarily works in an in-door dining service.  Occasionally, out-door terrace dining service.  Occasionally services other Club venues including pool, tennis court, health club and golf course.

Salary: $15-16 depending on experience
