The back server/food runner is responsible for communicating to the membership about their wants and needs relating to the a la carte menus, soft drinks/refills, reservations, upcoming events, and special requests.  The position requires attention to detail, follow through and the ability to multitask and prioritize needs while maintaining composure, focus and productivity. 


Duties and Responsibilities

  • Learning the POS system, reading tickets on a EXPO line, proper sequence of service, and table side manner
  • Having basic knowledge of all a la carte menus which include; dinner, classics, dessert, wines by the glass, libations, and lounge. Also gaining knowledge in weekly specials
  • Always mingling a positive attitude and look for positive outcomes in all opportunities
  • Constantly communicating and coordinating with fellow co-workers, head server, culinary staff, and supervisors to provide the upmost service to our members
  • Working in a face-pasted environment while adopting quickly to last minute changes and meeting needs of members in a prideful and timely fashion
  • Assist and prepare lead server by but not limited to:
    • Placing a breadbasket and butter to every table in assigned section
    • Service membership by marking the table with drink coasters, ask if they would prefer tap, still or sparking water, take soft drink orders (ice tea, coffee, hot tea, soda, juice, etc.), deliver water and drinks accordingly
    • Have pristine table maintenance by ensuring the members have proper place settings at all moments of service, constantly clearing and communicating with lead on table maintenance needs
    • Refill soft drinks and water as needed, as well as refilling bread baskets if requested
  • Communicate with FOH expediter and head chef to efficiently run food to the proper table and to the proper seat number without "auctioning" food to the members. Also, communicate with lead server and pastry chef to efficiently run desserts orders and prepare for birthday desserts 
  • Constant communication with front server during service to fully understand what is expected to meet the memberships needs for the food orders (special request, modifiers, etc.), drink orders, birthday's, coffee and tea service
  • Completely clear table after members have left and reset table with proper table settings. Be in constant communication with hostess regarding what tables are being sat again & table preparation for the following day
  • To follow the specie list of tasks provided by Supervisor to; open the restaurant, close the restaurant, stay busy during service and prepare for the next day
  • Assist co-workers in getting the dining room prepared for dinner service which includes but is not limited to:
    • Retrieving banquet chairs and tables for specific reservations and buffet once a week
    • Preparing service station with fresh coffee, fresh brewed ice tea, fill ALL ice bins and wine buckets with ice, prepare water pitchers & ice tea pitchers
    • Prepare outside service station during summer season with water, ice tea, ice bucket, silver to reset tables, clean place mats & linen napkins
    • Preparing the back-server station with polished water glasses, polished silver to reset tables, clean place mats and preset place mats with proper settings to efficiently tip during service, soften extra butter
    • "Make" butter ramekins for service, prepare bread baskets and cheese crackers
    • Communicate with supervisor in need for heaters on the terrace during the summer time-responsible for changing and receiving new propane tanks when needed
  • Assist co-workers in closing the dining room and preparing it for breakfast and lunch service the following day which includes but is not limited to:
    • Wiping down and sanitizing ALL tables in the lounge, dining room and terrace when it is in use
    • Polishing ALL silver, polishing glassware, preparing butter, stocking and organization of back server station, clean place mats (outdoor during summer season)
    • Moving furniture to original home, reset tables with proper chairs and number of chairs (this includes the terrace when in use), move outside heaters in proper home (out of sight looking inside out)
    • Removing cushions from terrace and properly storing inside clubhouse
    • Moving banquet tables back to table room and properly storing them once a week


Minimun Qualifications 

  • 1-2+ years of food industry positions such as bussing, expediting, hosting, & serving with preference for experience in fine dining restaurant settings
  • Beginner knowledge of food and beverage preparation, guest relations, service styles, and etiquette such as appropriate table settings, the order of service, & wine service
  • Mandatory to work on all holiday's, weekends and night shifts
  • Ability to perform physical job duties such as carrying plates, moving small furniture, & carrying a full server tray
  • Food Handler's Card
